The ingredients needed for this simple dish are :
- 4 Chicken breast fillets cut into cubes measuring 3cm.
- 1 teaspoon of Turmeric.
- 1 small stem of lemon grass.
- 2 tablespoons of vegetable oil.
- 2 teaspoons of caster sugar.
Ingredients needed to make the satay sauce :
- 2 teaspoons of muscovado sugar.
- 2 cm of ginger finely chopped.
- 1 small onion finely diced.
- 1 crushed garlic clove.
- 2 tablespoons of tamarind paste.
- 50g of peanuts.
- 2 tablespoons of vegetable oil.
- 1 tablespoon of dried red chilli flakes.
Step by step preparation :
- Mix the lemongrass, sugar and oil as well as the Turmeric together.
- Throw the chicken into the mix and stir well.
- Now get some cling film and cover the chicken. Put it in the fridge and leave for about 3 hours.
- Place your bamboo skewers into some cold water and leave to soak for about an hour. Hint : This will stop the skewers from burning.
- Mix the ginger , garlic and onion with the chilli and 2 tablespoons of water.
- Heat the oil in the saucepan over a medium heat and add the onion mixture.
- Stir repeatedly for 4 to 5 minutes or until the onion is golden.
- Add the peanuts and cook for about 5 minutes.
- Mix the Tamarind paste with 100 millilitres of water stirring until smooth. Remember you are doing this whilst the sauce is cooking.
- Add the satay sauce together with the sugar and simmer for 20 minutes.
- Get the Bamboo skewers and thread the chicken onto them.
- Grill for 2 minutes on each side. Do this until you can see that the chicken is slightly charred on the outside.
- Now serve with the satay sauce on the side.
